Singapore Noodles

Ingredients:

1 pack - NY stir fried noodles

1 tablespoon(s) - garlic chopped

1 tablespoon(s) - fish sauce

1 tablespoon - soy sauce

6 teaspoon(s) - curry powder

2 tablespoon(s) - toasted sesame oil

1 cup(s) - shrimp and deveined

1/4 cup(s) - onion julienned

1/2 cup(s) - carrots julienned

1/2 cup(s) - red peppers julienned

1/2 cup(s) - snow peas

2 - eggs

3 tablespoon(s) - vegetable oil

1/2 teaspoon(s) - sugar

1/4 cup(s) - cilantro chopped

1/4 cup(s) - sliced green onions



The Process:

  1. Prep

  • Cook the noodles according to package instruction, chill in ice water, set aside for later.

  • Peel, Take out the veins and dry the shrimp.

  • Cut all the vegetables , precook the carrots for 2 minutes in boiling water

  • Prepare the sauce by mixing : soy, fish sauce, garlic, 2 teaspoon of the curry powder and sugar

2. Cook

  • In a HOT!!! HOT wok add 1 tablespoon of oil cook the eggs ( about 30 seconds ) and remove from wok.

  • Wipe down and heat up the wok, add 1 tablespoon of oil. Add the shrimp and 2 teaspoons of curry powder. Cook for two minutes remove from wok.

  • Wipe down and heat up wok. Add 1 tablespoon of oil. Add the onions, cook for 30 seconds. Add the rest of vegetables, cook for 2 minutes. Finally, add the noodles and the sauce, cook to heat through

  • Add the cooked shrimp and eggs, sprinkle the remaining curry powder, stir to combine

3. Plate and serve

  • Plate the dish ASAP, you want to heat this hot.

  • Drizzle with the sesame oil

  • Top with fresh cilantro and green onion

  • Enjoy
